Last night I had a very emotional conversation with my 4 and 6 year old, all snuggled up together, in one twin bed. It started with some hurt feelings over a drawing, but ended in them, and me, crying our eyes out, trying to convince them there’s Christmas in heaven. So, I got to thinking today; this conversation runs so much deeper than just “how cute” and “aww aren’t they sweet”. Somehow their little minds started focusing on that I am going to die, their MOMMY will die one day. They set my timer to 100. Which, I explained, I will live and stay in their lives as long as possible. And they pleaded with me, “please mama, I don’t want you to ever die. You need to eat all your vegetables.” They continued on with how they love me and would miss me and be sad. Then we digressed into heaven and if it’s comfy enough. I tried to gather their little hearts and all their tears onto my shoulders, for me to mend and carry.But back to the vegetables part, these little girls want me to be healthy so I can be with them as long as possible. And it hit me, why do you or don’t you exercise and eat right? Especially if you have little lives you created relying on you. I get it, we all have our cheat days and indulgences, but that conversation right there is all that I ever need to remind me of why I live the way I do.So this is my little PSA, there is someone out there, I promise you, that wants you to live as long as possible. I get it, we all are going to die one day, there’s many unforeseen forces that come into play with this. BUT what about those choices you CAN make? Those choices that can give you a long and healthy life. DIY Rice paper rolls!!!Using mint & coriander, carrot sticks, shredded lettuce, vermicelli noodles, shredded chicken or prawns, or whatever you choose..And then using this recipe from @thealmondfarmer for the dipping sauce. .1 tbsp of 100% pure Almond Butter1 tbsp of fish sauce2 tbsp of lime juice2 tbsp of rice wine vinegar or white vinegar1 tsp of sugara fresh chopped mild chillia clove of garlic....Soooo good 👌😊.And when you are done making rolls, just toss all the ingredients in a bowl and drizzle with this sauce and eat the next day for lunch! 😋So delicious!!!!Amanda xx
