if you happen to have a mellow mushroom in your town/at school I’m beyond jealous. I was in Charlottesville last weekend and heard I could get a vegan pizza. I ordered one on the menu but made a lot of changes. this one has spinach, green onions, caramelized onions, and button mushrooms, along with a mozzarella style cheese which was probably the closest consistency to regular cheese that I’ve ever found. they also used an olive oil and garlic base so the crust doesn’t have any butter on it

Grilled Rainbow Carrots with Maple Glaze Prep Time 10 mins Cook Time 30 mins Total Time 40 mins Servings 8 servings Ingredients Heavy-duty foil Nonstick cooking spray 2 lbs . small rainbow heirloom carrots (or baby carrots), scrubbed, tops trimmed to ½-inch, cut in half lengthwise 1 Tbsp . + 1 tsp. olive oil ½ tsp . sea salt (or Himalayan salt), divided use ½ tsp . ground black pepper, divided use ¼ cup pure maple syrup (preferably dark amber) ¼ cup balsamic vinegar ½ tsp . ground cumin Instructions Preheat the Grill to medium Create a foil packet Lightly coat with spray. Set aside. Combine carrots, oil, ¼ tsp. salt, and ¼ tsp. pepper in a large bowl; toss gently to blend. Place carrots in the foil packet and fold it so the seams all are on the top and folded upwards on the ends Grill for 20 to 25 minutes, rotating the carrots at the half-way point or until carrots are at the desired crispness. While carrots are grilling make glaze. Combine maple syrup, vinegar, cumin, remaining ¼ tsp. salt, and remaining ¼ tsp. pepper in small saucepan. Bring to a boil, over medium heat, stirring occasionally. Reduce heat to medium-low; gently boil for 15 to 20 minutes, or until glaze has thickened. Remove from heat. Take the carrot packet off of the grill and open carefully. Pour glaze over carrots; toss gently to blend. I always forget how much work it can be to make my own pizza but it sure does turn out to be pretty tasty. this was trader joe’s frozen cauliflower pizza crust. I made my own pesto as the sauce (which was nut and dairy free) and added vegan parm, heirloom tomatoes, arugula, and balsamic vinaigrette. this was definitely a much different vibe from a regular pizza but it was so good

so you probably saw this on my story last night but I decided to make this tofu scramble again for breakfast😂 it seriously was so good and I’m so glad I’ve gotten over tofu and figured out how to use it in recipes. this was a really simple recipe this morning. I used extra firm tofu, ginger powder, cumin powder, turmeric powder, garlic salt, salt, pepper, portobello mushrooms, and arugula. so simple and the tofu looks just like scrambled eggs at first glance!!

the other day my cousin had a very interesting question for me. he asked “would you rather eat meat for a week or not have avocados for a month?” it was something that I really had to think about at first since I LOVE avocados and I don’t think I could ever eat meat again. so that lead me to my answer: I would give up avocados for a month. it’s crazy to think that I was eating a completely different way this time last year but I know my diet is making huge differences in my health and reversing possible diseases that were forming in my body. I feel so much better, have so much more energy, and have so many other added benefits. diet after all is the greatest influencer on health. the bowl pictured above is one my dad made when I was visiting him a few weeks ago and it was absolutely amazing. chick peas, spinach, potatoes, avocado, and quinoa

this veggie burger was SO EASY!! and the best part is you only need four ingredients. the only thing I did differently from the directions (see photo 3) is I didn’t grill these. our grill is currently not working so I tried them in the oven and they turned out to be pretty good! my carnivore family members also raved about them!

when I woke up this morning I got a text that said I was babysitting from 4pm today until about 6pm tomorrow!! so I had some time to meal prep to ensure I had enough food to eat. the only tough part about bringing food to their house is that one of the girls has severe allergies to dairy (which obviously isn’t a problem for me), peanuts, tree nuts, and sunflower seeds. since I eat a lot of food that contains these items, I tried to ensure I didn’t have any of that in my food! this meal includes: •quinoa •avocado oil •onions •scallions •mushrooms •carrots •sweet potato •cauliflower •thyme and honey balsamic vinaigrette a very nutrient dense meal. I had this for lunch and dinner today and have more for lunch tomorrow!

I don’t love portioning out all the food after it’s cooked, mainly because of space. Instead, I measure the portions and put it in dishes the night before. I mean feeding a dude for gains with a high metabolism takes up a good bit of space in the fridge 😂 . Diet culture is killing your progress 💣 . I get it. It seems like everyday there’s a new diet trend and it’s hard to keep up. I mean really, it would take days to name all the fad diets that have accumulated. So how do you know what you should and shouldn’t be eating? . It doesn’t have to be as complicated as it may feel like it is. It’s quite simple in the beginning- don’t eat like a jerk. Think about it. If you’re drinking soda everyday, greasy fast food regularly, a ton of processed food, etc., do you think you’re going to hit the health and physique goals you have? Probably not. . Now I can’t lie, there is a lot that goes into good nutrition and sculpting the body you want. However, it all starts with the basics: eat whole food, get enough protein, don’t drink your calories and don’t eat, and don’t keep eating when your body says stop. Most people are off to a good start by cutting out the majority of processed foods and drinks being consumed. . After you’ve started with the basics, then you can dive a little deeper into macros and what not. Remember that supplements ARE NOT necessary but are compliments to an already healthy diet and exercise regimen. . So what are the takeaways? You don’t have to follow the trendy diet, eat your veggies and lean meat, drink water and reduce your caloric drinks, focus on whole foods (which means you’re probably gonna have to cook more), and do your research! . I found this vegan lentil curry and I must say it was SO GOOD. the best part about this meal is that I bought almost all of the ingredients at the store plus a few other items that were all vegan (with the exception of the yogurt my sister asked me to buy) and the total was only $26! you CAN be vegan and not have to spend tons of money on food!! I definitely want to get into food prepping more during this upcoming school year and I think this meal would be a perfect one to use
Since coming back from South Korea, where I basically ate my way through Seoul, I’ve been craving Korean food HARDCORE. So today I decided to whip up a common Korean dish called japchae (잡채) which is normally pretty simple to make buuuuuuut I accidentally used some of the sauce meant for the meat for my noodles as well and long story short, my noodles are like a thousand shades darker than they should be 🙈 Still, it tasted bomb AF and that’s all that really matters, right?? Well I’m off to enjoy the day with my dad, happy Wednesday friends!! 🌱🌻🌸 • JAPCHAE (잡체)🥡 -cooked glass noddles -very thinly sliced beef -onion -shiitake mushrooms -carrots -spinach ................. Meat Marinade -5 tbsp soy sauce -1 tbsp sesame oil -2 tbsp sugar (could try honey) -dash garlic powder -spoonful of diced garlic -spoonful of chopped green onion -dash of black pepper -pinch of salt -sprinkle of sesame seeds •combine meat marinade ingredients in a bowl and then pour over beef. Let it marinate for at least 20 mins •heat pan until hot and then add meat, quickly cooking it for about 10-15 seconds per side. Set aside for now •chop up onion and shiitake mushroom, and thinly slice the carrots •in a separate pan (this was my mistake, I used the same pan to cook the meat and the noodles/veggies so the meat marinade got all over my noodles!) sauté the onion, carrots, mushrooms and spinach. Then add the cooked glass noodles, the meat and a drop or two of soy sauce as needed. Mix everything together and enjoy!

so I’ve been MIA lately since I had some family in town last week and then went up to school this past weekend to move into a new apartment so I’ve been pretty off the grid. I actually got a picture of this cauliflower rice risotto this time! I included the recipe I found online in the photos if anyone is interested in making this! the only thing I did differently was I used a honey balsamic vinaigrette and that makes it taste sooo good. also the recipe says it makes 2 servings but it actually makes about 3-4
Whaaat Nat eating a savory breakfast salad again!? Ehhh not quite 😉 Just a lil throwback for ya because this lunch salad was too pretty not to share!!! I’ve been craving my typical sweet breakfasts lately (cue all the cauli rice and @mikeys paleo English muffins with nut butter) so I’ve been listening to that ☺️ I used to feel pressured to make the switch to savory breakfasts, but I simply can’t hop fully onboard 🤷🏼♀️ and THAT’S OKAY!!! Listen to YOUR body and cravings ✌🏻 Because what’s worse than not feeling satisfied or happy after a meal!? ••• Also, real talk 👉🏻 yesterday was not my day. Nothing in particular went wrong, but I was just in a MOOD. You know the kind of mood where everything just gets on your nerves? Ya, THAT kind of mood (even I’m not positive 100% of the time y’all!!). My biggest tips for when I’m feeling out of it and a little on the negative side is to, first, simply let myself FEEL those things. I never try to mask those feelings and I allow myself to move through them naturally.
