My first ever glaced cake. Blackberry mousse, blackberry/yuzu core. The glacing part was actually and lot easier than expected. That’s another box ticked off.
I fell in love with a copper tarte tatin pan. Unfortunately Mauviel don’t stock them in Denmark at the moment. So bought it in the UK. Ever since I recieved it, I’ve used it for all kinds of things - but no tarte tatins. Today was the closest so far, a plum upside down cake. And it was really good. Peppers stuffed with beef and pearl couscous. Fragrant, spiced and even the picky crown prince liked them. That says a lot. He even had salad and asked for more.
Garden pears. We have the best pears in the garden for both cooking and enjoying au natural.
Working on something about plums - and eating them in season. Been working on it so long, we’re almost out of season.
Guess we all have go-to dishes, when you out of ideas or time. This is one of mine. Something curried. In this case pork. 10 minutes work. Food for two days. Absolutely perfect.
I was persuaded into buying a whole lot of ceps from my normal veggiepusher. My initial thought was to make cannellon, but I kind of went out of time and made this pasta dish with ceps, girolles, walnuts and sage.
We had some leftover stew, so I made this to accompany it. Roasted carrots and pumpkin with loads of brown butter and sage. The leftovers from this will end up in a soup tomorrow.
