Cake, I love thee... Since Beanie's birthday party, I've made this rainbow cake (well, there's a rainbow on the inside) three times. It is simple to make and you get a 'wow' every time. The sponge is light, it's not covered in sickly sweet icing and I add in some fresh fruit on the inside for even more fruitiness. I'm not a fan of cakes covered in a thick layer of fondant icing or sugarpaste. What's your worst cake nightmare?
I had the best weekend with these ladies @sallyscottages in the Lake District (#reviewtrip). It was sunny on Saturday, we walked a lot, we had a lovely lunch by a lake and we went to Cockermouth for dinner. Don’t be fooled though, despite the beaming smiles, the happy banter on my stories and my upbeat mood most of the time, life isn’t always easy my end and I’m going through a lot at the moment. Today is #WorldMentalHealthDay and I owe it to myself to admit that there are tough days. There are days when I cry all day, there are days when I go to bed straight after dropping my children to school and other days when I don’t even feel like getting out of bed at all. Being a grown up sucks sometimes...
I spent last weekend in Cumbria with a great bunch of ladies. We ate a lot, walked a lot, laughed a lot and talked a lot. There might have been some oversharing and there were so many giggles my abs were hurting. Are you a lunchbox hater or do you embrace lunchbox packing? I have to say my enthusiasm varies according to what’s in the fridge, how much time I have and whether we’ve just been to France or not (I bring lots of lunchbox goodies back from the homeland!). We’ve just worked with @nairnsoatcakes and put together lotta of tips and ideas to make lunchbox packing more enjoyable. A few weeks ago, the lovely people at @marksandspencerhomepr invited me to cook with development chefs Steve and Laoise @laoisecooks at @thewoodspeen, using fresh produce and the latest cookware available at @marksandspencer. This weekend, I discovered Pilates with the wonderful Susie, who made us work really hard and helped get that core working. I'd never tried anything like it and it was brilliant in every way. I will definitely be going to @pignoulet again next September and in the meantime, I will find myself a Pilates class around here. Graceful model: @freefromfairy
A Pilates retreat, you say? To be fair, I had no idea what pilates was until yesterday. I’d vaguely heard about it and people with bad backs and weak pelvic floor muscles went on and on about it, but I’d never tried. As much as I’m happy to have a go at everything, I also tend to stick to what I know. Since yesterday, I’ve had 3 Pilates classes with the wonderful Susie @pignoulet and oh em gee, P.I.L.A.T.E.S rocks. Combined with a retreat in a remote maison de maître in a quaint village in the South of France with delicious (yet healthy) food and you have a winning combination! The lovely James and Susie have been friends with my lovely Rebecca @glutarama and invited our ‘free from’ gang for the most relaxing weekend I’ve ever had! I’ll be leaving a deposit for next year, whoop whoop! #presstrip

A couple of weeks ago, I had a great time cooking with a few friendly bloggers and development chefs at @marksandspencer. We made flatbread, courgette baba ghanoush, dessert and I had the bet day! Today, when I went to Marks and Spencer, I found the new Colour Chef range and got myself a pretty casserole dish (already used to make dinner), a pan, new measuring cups from the Albany range, tea towels, silicon spoons and plates. Spot the bloggers’ children! When Colette @goingonanadventureblog and I got together with all our children for a picnic, they all got on like a house on fire and spent the day documenting our adventures on Instagram Stories. They were so funny (and rather cute). Thanks Holly @hollybellmummy for recommending Abbey Park in Leicester. What a gorgeous park! I’ve written about our day on the blog.
Help! What kind of cake should I make for Beanie’s 8th birthday in a couple of weeks? If anyone has a foolproof recipe for a ‘big’ cake, I’d love it if you could send it my way. Ideally, the cake would have the wow factor without involving a gazillion steps and be gender-neutral as she’s having a joint party with her friend Francisco. I’ve just cleaned and stoned all our Mirabelle plums. They’re now in the freezer ready to be used in a tart for Beanie’s birthday. Somehow this has made me feel like it really is the end of the summer holidays. I don’t want summer to ever end!
I had the best day today at @thewoodspeen cooking up a storm with lovely @londonkitchendiaries & following instructions and tips from @marksandspencer development chefs Steve @krazeeyummy & Laoise @laoisecooks. I tried @marksandspencerhomepr’s AW18 range of cookware and loved it all. Do I sound like a psychopath if I say the sharp knives were the best I’ve used in ages? Dessert was the cherry on the top of this wonderful day spent in great company. Turns out baked yoghurt, poached spiced pear & blackberry compote with sweet rose dukkah is rather moreish.
